Slow Cooker BBQ Beef Brisket

Ingredients
- (3.5 lbs) Brisket Roast
- (1 tbsp) olive oil
- (1 tbsp) brown sugar
- (2 tsp) paprika
- (1 tsp) onion powder
- (1 tsp) garlic powder
- (1/2 tsp) cumin
- (3/4 tsp) mustard powder
- (1 tsp) salt
- (1/2 tsp) black pepper
- (2) garlic cloves
- (1/2 cup) apple cider vinegar
- (15 oz) tomato sauce
- (1/2 cup) brown sugar
- (2 tsp) black pepper
- (2 tsp) onion powder
- (1 tsp) mustard powder
- (1 tsp) cayenne pepper
- (1 tbsp) Worcestershire sauce
Directions
- Place rub in a bowl and mix to combine.
- Rub all over brisket. Leave rub on for 30 minutes - 24 hours in a fridge, if time allows, though not necessary.
- Combine BBQ sauce ingredients (garlic cloves, apple cider vinegar, tomato sauce, brown sugar, black pepper, onion powder, mustard powder, cayenne pepper, Worcestershire sauce) in a slow cooker. Mix ingredients, then add brisket.
- Slow cook for 8-10 hours, depending on your roast size (3 lbs ~ 8 hours, 4 lbs ~ 10 hours).
- Remove brisket and set on tray.
- Pour remaining liquid from the slow cooker into a saucepan and bring to a simmer over medium-high heat until sauce reduces to a syrup like consistency. **Note that the sauce will continue to thicken as it cools.
- Drizzle brisket with oil and roast in a 390 degree oven for 15 minutes until brown spots appear. Remove, then baste generously with sauce.
- Return to oven for another 5 minutes.
- Baste again and return to oven for another 5-10 minutes until sauce has caramelized over brisket.
- To serve, slice against the grain and pair with remaining BBQ sauce.
