Easy Roast Beef Sandwiches

Looking for a quick and easy fixin' for lunch or dinner before practice? Save the time, but savor the flavor with these quick and easy roast beef sandwiches! Easily prep a sandwich for one or a few more to feed the whole family.

Ingredients
- (1) onion, sliced
- (1) red bell pepper, sliced
- (6 oz) fresh mushrooms, sliced
- (1.5 tsp) olive oil
- (8 slices) provolone cheese
- (1 lb) Italian Roast Beef Sandwich Meat
- (4) sub buns
- (8 tbsp) dressing as desired - mayonnaise, horseradish, mustard, etc.
Directions
- Slice sub buns if not already. Add your preferred dressing (mayonnaise, horseradish, mustard, etc.) to the buns.
- Prep all vegetables. Wash and slice.
- Heat olive oil in pan over medium heat. Add in vegetables and saute for 5 minutes or until softened.
- In another pan, heat the roast beef for 5 minutes or so.
- Divide the hot roast beef onto the sub buns and quickly add 2 slices of cheese to each.
- Divide sauteed vegetables between the sandwiches atop the cheese.
- Options - You can stop here if you like (or if you're short on time), top the sandwich with a bun and enjoy! Or, for a hotter, more melted sandwich, set the open faced sandwich in a toaster oven or oven at 350 for 3-5 minutes, until cheese is melted, then top with a bun and enjoy!
